The Science Behind Your Plate

Presented by the Tasmanian Institute of Agriculture (TIA), this four-course dinner will be a field-to-feast revelation – a celebration of science, agriculture, and culinary creativity.

The story begins in Tasmania’s rich and fertile soils, where roots intertwine, and seeds wait to emerge. We celebrate the unsung heroes, the pollinators, who bring our fruit and vegetables to life. Our farmers tend the land, braving the seasons and unpredictable elements to bring us nutritious food.

In the hands of our guest chef Cameron Matthews (Mapleton Public House) and Matt Seggie (Diverge), the ingredients transform to reveal the science behind your plate.

The paddock-to-plate journey is a scientific quest and the night’s menu is crafted to the journey.
